Hasian is a Batak word for someone deeply loved — the name our grandmothers used when they fed us. We took that feeling and turned it into shattering crust, hot rice, and sambal that wakes the whole table up.

Indonesia has the world's largest archipelago of cuisines, and almost none of it has made it to American kitchens. We're changing that with fried chicken that crackles on first bite and carries lemongrass, turmeric, kemiri, and heat in every layer.

The chicken comes out bronzed and loud, the glaze lands sweet-salty, and the sambal brings the bright, smoky depth that makes Indonesia taste like Indonesia.
